are there any adons that let you view all the skills for a profesionwhen ur not at a trainer?

If you use Fubar, the TrainerFu sounds about right.

If you want everything craftable by anything, then perhaps Saeris' LinksList is worth looking at.

TradeskillInfo is a good one, searchable by item or material.

The version on here is waaaay old, but you can get the latest version from files.wowace.com
