I get the same - more noticeable in Northrend for some reason (possibly due to flying) but goes away with Carbonite disabled. The mountainous region between wintergrasp and Ice crown when flying back...

I'm getting terrible problems with sky and water textures - so much so I'm rolling back - it makes the game look too ugly :(

Although I've been playing WoW since early vanilla, I've come to rely on Carbonite as I have MS which affects my memory - The little coloured areas are just the thing I need to get me through quests...
