Nope, everything except for the macros and addons are stored server side - the macros are apparently moving to server side in WotLK too
.
You can back up your WTF folder so you have all your settings/macros, and back up your Interface directory so you have all of your addons, but that's pretty much it.
There are a few addons out there that save as many details as they can about your characters (
Character Profiler springs to mind), so if you can see something bad happening to your account in the future you might want to try backing up all of the data through an addon like that so you have a list for future purposes
