You might try unchecking the "Auto Scale" box on the top right corner of your minimized map. The one on your pic with a check in it. The other one (the one with the "X" in it) is for locking your minimized map in place. However, if you hover each with your cursor, they'll show a tool tip telling you which does what.
I don't know if that will stop the problem, but with all of the "new zones" that were added for MoP, that might (at least) help your sanity while looking at Carbonites map until it can "catch up" to the new content.
Unchecking that option will at least stop the minimized map from zooming out to show both your characters location and your "go to" point.
