wowprogramming or wowwiki are about it, as far as documentation goes. There is also wowcompares, but that only shows the current Blizzard .lua/.xml code (which you can extract yourself with the AddOn Kit from the WoW site) and diffs it with previous versions.
Documentation comes from addon authors who figure out how stuff works by examining the Blizzard code and testing themselves.
