is there a way to make dogtags work with stuf unit frames?

Nope.

StUF Unit Frames is designed to work with it's own (limited, but useful) tag system, or with pure lua (similar to the Pitbull LuaTexts, but not quite).

DogTags does not work with it - only addons written by ckknight, generally, work with dogtags (ckknight being the author of dogtags, pitbull3, pitbull4...)
