Casting Bar Issues
I don't know if this is the same bug that exists for other casting bar issues, but if you're mid-cast one one ability, then start spamming your next spell, the cast bar disappears for the current cast, and doesn't resume until the next ability or so.

It never happened to me, and yes, I'm always smashing my buttons spamming spells.

Did you do a clean install of nUI 5.0 ? (that means deleting both the folder under Interface/Addons and WTF)
